
Juicy, spiced chicken skewers baked to perfection! Perfect for summer dinners served with yogurt sauce, tomato-cucumber salad, and fluffy pita.
Ingredients (Makes 7 skewers)
- 1 lb (450g) ground chicken (not ultra-lean)
- ½ small onion, grated
- 2 garlic cloves, minced
- ¼ cup fresh parsley, finely chopped
- 1½ tsp ground cumin
- 1 tsp ground coriander
- ½ tsp ground cinnamon
- ½ tsp smoked paprika
- ½ tsp seven spice (or use allspice)
- ¾ tsp salt (adjust to taste)
- ¼ tsp black pepper
- 1 tbsp olive oil
- 1 tbsp plain Greek yogurt
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with foil and lightly oil it.
- If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
- In a large bowl, combine all ingredients and mix until just combined. Do not overmix.
- Divide the mixture into 7 equal portions. Lightly oil your hands and shape each portion into a log around a skewer.
- Place skewers on the prepared baking sheet.
- Bake for 16–18 minutes, flipping halfway through, until golden brown and cooked through (internal temp: 165°F/74°C).
- For extra browning, broil for 1–2 minutes at the end.
- Serve hot with yogurt sauce, tomato-cucumber salad, and pita or rice.
Lemony Yogurt Sauce
- ¾ cup plain Greek yogurt
- 1 small garlic clove, grated
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1–2 tbsp chopped mint or parsley
- Salt to taste
Whisk all ingredients together. Thin with cold water if needed. Chill until ready to serve.
Tomato-Cucumber Salad
- 1 cup chopped tomatoes
- 1 cup finely chopped cucumber (Persian or English)
- ¼ red onion or shallot, finely sliced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- Salt and black pepper to taste
- Optional: Fresh mint or dill
Toss everything together and let sit for 5–10 minutes before serving.
