Brazilian Banana Cake with Doce de Leite

For the Cake:

3 medium ripe bananas (sliced)

2 large eggs

1 cup (200g) granulated sugar

½ cup (120ml) vegetable oil or melted butter

½ cup (120ml) milk

1 tsp vanilla extract

2 cups (250g) all-purpose flour

1 tbsp baking powder

Pinch of salt

For the Streusel Topping:

1 cup (150g) all-purpose flour

½ cup (100g) granulated sugar

1 tsp ground cinnamon

7 bs cold unsalted butter, cubed

Pinch of salt

Doce de leite (as much as your heart desires!)

Instructions

Preheat your oven to 350°F (180°C). Grease and flour a 9×13-inch (23×33 cm) baking pan or line it with parchment paper.

In a medium bowl, mix the flour, sugar, cinnamon, and salt.

Add the cold butter cubes, and use your fingers or a pastry cutter to combine until the mixture resembles coarse crumbs. Set aside.

Prepare the Cake Batter

In a large mixing bowl, whisk the eggs and sugar until light and creamy.

Add the oil (or melted butter), milk, and vanilla extract, mixing until smooth.

In a separate bowl, whisk the flour, baking powder, and salt.

Gradually fold the dry ingredients into the wet mixture until just combined.

Pour the batter into the prepared pan, spreading it evenly.

Arrange the banana slices over the batter in a single layer. Add dollops of doce de leite.

Generously sprinkle the streusel topping over the bananas.

Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean and the streusel topping is golden brown.

Let the cake cool in the pan for about 10 minutes! Serve warm or at room temperature. Drizzle more doce de leite on top!
